For those of you requesting an easy recipe, here's one for chicken tacos. Using chicken is healthier than beef, plus if you can find low sodium taco seasoning it's even healthier.
1 1/2 pounds chicken breast
1 packet taco seasoning
1 jar of your favorite salsa
Add all ingredients in a crock-pot and cook on low for 4-5 hours. Shred chicken and mix well with sauce. Serve in soft tacos with your favorite taco toppings: tomato, lettuce, cheese, sour cream, etc.
